INGREDIENTS
- Cleaver’s Organic & Grass Fed Beef Meatballs
- 1 L organic or standard beef stock
- 1 L water
- 1 tbsp sugar
- 1 stalk of Lemongrass
- Small piece of peeled ginger or 1 tablespoon ginger powder
- Canola or vegetable oil
- 1 packet rice noodles
- Asian greens
- Lime wedges to serve
METHOD
- Combine the beef stock, water, sugar, lemongrass and ginger in a large saucepan and simmer on medium heat
- Heat a separate pot to medium heat,add a little oil, then add Cleaver’s organic and grass fed beef meatballs
- Add the stock mixture to the meatballs pot, straining the liquid to remove ginger and lemongrass pieces
- Simmer gently to combine
- Add the rice noodles and cook for 3 minutes
- Steam Asian greens
- Serve the meatball soup with rice noodles and Asian greens, and add lime wedges on the side for additional flavour

- Top with fresh Coriander, Basil and Mint leaves
