ASIAN INSPIRED MEATBALL RICE NOODLE SOUP WITH LIME WEDGES & ASIAN GREENS

Delicately flavoured, this Asian inspired meatball soup is simple to cook and tastes delicious.

INGREDIENTS

  • Cleaver’s Organic & Grass Fed Beef Meatballs
  • 1 L organic or standard beef stock
  • 1 L water
  • 1 tbsp sugar
  • 1 stalk of Lemongrass
  • Small piece of peeled ginger or 1 tablespoon ginger powder
  • Canola or vegetable oil
  • 1 packet rice noodles
  • Asian greens
  • Lime wedges to serve

METHOD

  1. Combine the beef stock, water, sugar, lemongrass and ginger in a large saucepan and simmer on medium heat
  2. Heat a separate pot to medium heat,add a little oil, then add Cleaver’s organic and grass fed beef meatballs
  3. Add the stock mixture to the meatballs pot, straining the liquid to remove ginger and lemongrass pieces
  4. Simmer gently to combine
  5. Add the rice noodles and cook for 3 minutes
  6. Steam Asian greens
  7. Serve the meatball soup with rice noodles and Asian greens, and add lime wedges on the side for additional flavour

  • Top with fresh Coriander, Basil and Mint leaves
