INGREDIENTS
- 1 pack Cleaver’s Organic & Grass Fed Beef Stir Fry
- 2 tsp ground cumin
- 1 tsp paprika
- 2 tsp dried oregano
- 2 limes: 2 tbsp of lime juice, 1 lime for salsa and lime wedges to serve
- 2 tbsp of canola or vegetable oil
- 1 red capsicum, thinly sliced
- 1 red onion, thinly sliced
- 8 flour tortillas
- Guacamole
- 1/4 cup chopped coriander (optional)
Salsa ingredients:
- 1 medium tomato
- 1 small packet of yellow tomatoes
- 1 red onion
- 1 green capsicum
METHOD
- To make Salsa – dice the tomatoes, red onion and green capsicum, combine them in a small dish and add juice from 1 lime – cover and stand aside
- Combine the lime juice, olive oil, cumin, paprika and oregano, and marinade the Cleaver’s Organic & Grass Fed Beef Stir Fry for 10-15 minutes
- Heat a frying pan to high heat
- Add a little bit of oil, add the beef and stir fry for 1-2 mins until cooked through
- Remove the beef to rest
- Add the red capsicum and onion to the pan and cook in the meat juices
- Cook the tortillas to the instructions on the pack
- Place the beef, capsicum & onions inside each tortilla and serve with guacamole and salsa
TIPS
- For hotter salsa, replace the green capsicum with finely sliced chillis
- Salsa can be made ahead and kept covered in the fridge for up to three days
