BEEF STRIP FAJITAS WITH LIME, GUACAMOLE AND SALSA

Always popular, these beef strip fajitas are a great way to feed the crew!

INGREDIENTS

  • 1 pack Cleaver’s Organic & Grass Fed Beef Stir Fry
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 2 tsp dried oregano
  • 2 limes: 2 tbsp of lime juice, 1 lime for salsa and lime wedges to serve
  • 2 tbsp of canola or vegetable oil
  • 1 red capsicum, thinly sliced
  • 1 red onion, thinly sliced
  • 8 flour tortillas
  • Guacamole
  • 1/4 cup chopped coriander (optional)

Salsa ingredients:

  • 1 medium tomato
  • 1 small packet of yellow tomatoes
  • 1 red onion
  • 1 green capsicum

METHOD

  1. To make Salsa – dice the tomatoes, red onion and green capsicum, combine them in a small dish and add juice from 1 lime – cover and stand aside
  2. Combine the lime juice, olive oil, cumin, paprika and oregano, and marinade the Cleaver’s Organic & Grass Fed Beef Stir Fry for 10-15 minutes
  3. Heat a frying pan to high heat
  4. Add a little bit of oil, add the beef and stir fry for 1-2 mins until cooked through
  5. Remove the beef to rest
  6. Add the red capsicum and onion to the pan and cook in the meat juices
  7. Cook the tortillas to the instructions on the pack
  8. Place the beef, capsicum & onions inside each tortilla and serve with guacamole and salsa

TIPS

  • For hotter salsa, replace the green capsicum with finely sliced chillis
  • Salsa can be made ahead and kept covered in the fridge for up to three days
