Salads are always fantastic because there are so many variants of them around. Mixing up the fresh produce in this recipe is a simple but effective way to enhance your paleo salad recipes. 5 TOP TIPS TO HELP YOU BUILD THE MOST INCREDIBLE SALAD

Firstly, for the base of your salad stick to what you know, love and find delicious! If you know you love kale and lettuce and celery, make sure they are in your dish. Let the main item be the variant. Instead of sausage, maybe put in some chipolatas or chuck & brisket burgers to give the dish a different feel.

Secondly, don’t forget to add some seasoning to your salad. Some salt and pepper and maybe some other herbs and spices to compliment your choice of meat.

Thirdly, dress to impress. A well dressed salad is a happy salad so be sure to add a salad dressing which will compliment your salad and bring out the best flavours of your dish.

Fourthly, get your hands in there! Tongs sometimes can’t get into all the nooks and crannies that your beautiful dish has. So get your hands in and make sure all of the ingredients in your paleo salad are mixed well.

PALEO GRILLED BEEF AND SWEET POTATO RECIPE

Servings – 4

Ingredients for salad

  • 6 Cleaver’s organic beef sausages
  • 2 large sweet potatoes
  • 2 large red capsicum
  • 2 tbsp olive oil or avocado oil
  • 3 cups mixed greens
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped greens

Ingredients for dressing (option 1)

  • 1/4 cup apple cider vinegar
  • 1 clove garlic minced
  • 2 tbsp honey
  • 1 tbsp dijon mustard
  • 1/2 cup olive oil or avocado oil

Ingredients for dressing (option 2)

  • 1/3 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tbsp Paleo Dijon mustard
  • 2 tsp ground ginger
  • 1/2 tsp dried parsley
  • Pinch of salt

Method

  1. While heating your grill, prepare your vegetables. Peel both sweet potatoes and cut into 1/2 inch thick discs.
  2. Slice your capsicum in half vertically, then again so that you have 4 long pieces. Brush the vegetables with olive oil or avocado oil.
  3. Cook cleaver’s organic sausages and vegetables on the grill, turning about every five minutes. Your vegetables will be lightly charred, and sausage should be cooked though before serving.
  4. Chop up your veggies into small pieces, and sausage into bite size pieces.
  5. Place the salad ingredients with mixed greens into a large bowl, and add fresh cilantro and green onion.
  6. Whisk together the dressing ingredients into a small bowl: apple cider vinegar, garlic, honey, mustard, and oil.
  7. Pour over top the veggies and sausage.
  8. For dressing option 2:  Combine all of the ingredients in a bowl or jar and stir well to combine. Store in an airtight jar in the refrigerator.
  9. Serve immediately and enjoy with your family and friends!
